Summer = Smoothies!

Here in sunny Queensland, it sometimes feels like summer all year round. But there are days (like

today) that are 36 degrees, and what better weather then to break out the summer fruit smoothies you've been wanting to try.
Since summer 2014 I have changed the way I eat and though I'm not stirctly vegan, I try to eat as much organic, fresh produce as I can. Smoothies are a perfect way of incorporating fruits and veges into your diet. And I mean seriously, who doesn't love a smoothie!
The fun thing about going vegan is the opportunity to try fruits and veges I never would have eaten otherwise, but now they like any other favourite foods.
I would like to say though, that going vegan was not only a healthy choice, but a moral one too. As a child I had seen cows being killed for meat on the family farm, (I could never eat it even then) and that image has stuck with me my entire life & plagued me everytime I ate meat. But when you live in a single parent household it isn't always easy to refuse the food you are provided with. It has taken me a long time to choose to eat healthier and its a choice I'm so glad I made. Eating healthy is a lifestyle, not a diet, and smoothies are a massive part of that.
I like to prep my smoothie recipes and put them in the freezer so all I have to do is add water/soy or almond milk/coconut water & any flavours you want to add, like cinnamon.

So I've compiled a little list of my favourite smoothie recipes for you.
1. The Allrounder
1/2 banana
1/2 carrot
small handful of baby spinach
1/4 of an apple sliced
1/4 stick celery
1/2 kiwi fruit
1/4 cucumber
small handful of blueberries or raspberries
2 mint leaves
Add these to a zip lock bag and freeze. I generally get 7 or 8 zip lock bags at a time to make for a weeks worth of smoothies.
Mix.
Add zip lock bag of frozen fruits and veges, approx 1/2 cup of milk/water, a dash of cinnamon. Whiz it up, and serve. This will make enough for 2 small serves or 1 large smoothie.

2. Blueberry Bliss
approx 1 cup frozen bluberries
1/2 banana
small handful of organic oats
1/2 cup almond milk
1 tsp chia seeds.
Blend until smooth.
Top with pepitas, coconut chips & mint.
3. Tropical Sunrise
1/2 frozen mango
small handful of frozen peach or nectarine slices
dash of honey
1 tbsp tahini
few chunks of frozen pineapple
1/2 banana
1/2 coconut water
Blend until smooth, serve up and top with a dollop of coconut yoghurt.
